What’s for dinner

20 minutes until dinner? Yes you read that right. Even when I’m tired and don’t always want to cook, I know I should do what’s best for my body. This was a super simple dish and oh so delicious!


Lentil & Kidney Bean Curry

1 cup green lentils

1 can kidney beans

1 16oz jar of crushed tomatoes

1 can coconut milk

1/2 cup carrots chopped

1 cup chopped onion

Coconut oil

2 tsp smoked paprika

2 bay leaves

2 tbsp Balti curry powder

1 tbsp garlic powder

Himalayan salt

Basil/mint and or cilantro for garnish.

4 cups water

Sauté onion, carrots in 1 tbsp coconut oil until translucent. Add dry lentils, beans, bay leaves, salt to taste and water (don’t use tap water). Bring to boil and simmer for 10-15 min until lentil begin to soften. Add tomatoes, coconut milk and spices. Stir and simmer for another 10 min until liquid has thickened and lentils are soft.

Serve with rice and quinoa, top with chopped herbs.

Note: ALWAYS use organic items and avoid using tap water when cooking. It’s filled with drugs and chemicals that are absorbed into your food.
