This salad was an unexpected creation. As someone who struggles with #anemia I’m always looking for great tasty ways to get iron in my diet. This is very common with people that have #thyroid issues. this is my take on a Caesar salad but with lots of healthy additions that are not only hire an iron but also other key for the nutrients that we need to stay healthy and fit. #fiberfueled #ironrich foods
“Iron Man“ Caesar Salad
makes 2 servings, double to make more.
2-2.5 cups chopped lacinato kale (dinosaur kale)
3 tbsp vegan Caesar salad dressing
1 tbsp organic raisins
1 tbsp salted organic pistachios
1/2 cup organic black beans, drained and rinsed
Salt, pepper to taste.
1/2 avocado for garnish (optional)
Vegan Caesar salad dressing:
1/2 c soy free follow your heart mayonnaise or favorite vegan mayonnaise
1/2 tsp salt
1/4 tsp coarse ground black pepper
1 tbsp Lemon juice
1 tsp garlic powder
1 tsp Dijon or brown mustard
1/4 tsp worchestershire sauce
*mix together, refrigerare.
Optional recommendation: I didn’t have any but it would be great to top the salad with either pickled or smoked beets.
Mix the kale, nuts, raisins and black beans together, add vegan Caesar salad dressing, toss, and add salt, pepper to taste. Top with avocado and enjoy!
